It's my passion and I love it. Enough said.

I've never liked baking butter cake, that's because I've never found a good recipe that doesn't result in a dry and coarse butter cake. 

But now that I have completed Wilton Course 3, a dense cake is essential for making sure the whole cake doesn't collapse when it's covered and decorated with fondant and gum paste.

So I asked around and Googled. And I manage to get my answer to not just a very delicious and gorgeous butter cake but also one that's moist and soft.



So here's the recipe I got from Wen's Delight. The recipe uses the chiffon method so that the cake is light and soft!

Old School Butter Cake

Ingredients
250g butter
85g caster suger
1 tsp vanilla paste
1/8 tsp salt
1 tbsp milk
4 egg yolks
200g flour
1 tsp baking powder

4 egg whites
85g sugar

  1. Preheat oven at 170 degree celsius. Line a 8" square tin.
  2. Cream butter, sugar, salt and vanilla until light and fluffy.
  3. Add in egg yolks one at a time and beat till creamy. Add in milk and mix well.
  4. Sift in flour and baking powder and mix well. Set it aside
  5. Whisk egg white and sugar till soft peak.
  6. Fold in 1/3 of the egg white mixture into the butter mixture. Once mixed, fold in the remaining egg white mixture.
  7. Pour batter into lined baking pan and bake for 40 - 45 min.

I also attempted a marble cake with the above recipe. Once you have the batter done, take out 100g of the mixture, and add 1/2 tbsp of chocolate paste to the 100g batter.

Pour the butter mixture into the baking pan, then pour the chocolate mixture on top and twirl with a chopstick to create the marble effect.

Black Forest Cake

Ingredients
4 eggs
80g flour
20g cocoa powder
100g castor sugar
12g ovalette
25g milk
90 melted butter

  1. Put all ingredients except melted butter in bowl.
  2. Beat in high speed until ribbon stage
  3. Add in melted butter & mix thoroughly.
  4. Bake at 190 degree celcius for 20 min, with 8" tray.
  5. Allow cake to cool before decorating.

Frosting the cake

Ingredients
350ml whipped cream
1/2 cup chocolate shavings
1 can of pitted cherries
  1. Slice cake into 2 or 3.
  2. Spread whipped cream on layer 1, add pitted cherries to cream.
  3. Top with layer 2 and spread with cream and cherries.
  4. Top with later 3 and spread cream to cover the entire cake.
  5. Decorate with chocolate shavings and halved pitted cherries.
I learned how to frost the cake from youtube. The videos teaches you how to frost, and it's really good! Except that the lady took only a minute to frost the cake, but I took like 10 min! =P Here's the video from ExpertVillage: http://www.youtube.com/watch?v=4o9n2uva4fw

So while I was trying to avoid the rain on my way back home after a good lunch with Pei, I managed to grab Alex Goh's 'Baking Code' from Popular Bookstore. Local cookbooks are always the best plus the steps in his book are clear and precise, which is good!

Anyhow, I tried out his recipe on Traditional Butter Cake. And it was yummy!

Traditional Butter Cake

Ingredients A
160g butter
160g margarine

Ingredients B
5 eggs
250g sugar

Ingredients C
1 tsp vanilla essence

Ingredients D
280g plain flour
1 tsp baking powder

Ingredients E
1/2 tbsp chocolate paste
  1. Cream Ingredients A until smooth and fluffy.
  2. Whip Ingredients B until light and thick. Add in Ingredients C, mix until evenly blended.
  3. Add in Ingredients A, mix until well-combined. Add in Ingredients D, mix until well incorporated.
  4. Take 100g of the above batter and mix with Ingredients E until well-blended.
  5. Use teaspoon to spoon the chocolate batter over the plain batter and swirl it to make marble effects.
  6. Bake at 175 degree celcius for 50-60 minutes.
