My favorite all time drink! One that seldom goes wrong too! So having come across such a recipe for cupcake definitely spikes my interest!

Got the recipe from BrownEyedBaker, and reviews I've received from my colleagues are great!


Mojito Cupcakes   
Ingredients
½ cup buttermilk
½ cup mint leaves, bruised
190g all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
115g unsalted butter, at room temperature
200g granulated sugar
2 eggs, at room temperature
Zest and juice of 1½ limes
2 tablespoons white rum
¼ teaspoon vanilla extract

To Brush the Cupcakes
2 tablespoons white rum
2 sprigs fresh mint

Frosting
340g unsalted butter, at room temperature
575g icing sugar
1½ tablespoons lime juice
3 tablespoons white rum

  1. Combine the buttermilk and the ½ cup mint leaves in a small saucepan over medium heat. Warm until just starting to steam (do not simmer), then remove from the heat and cover. Let steep for 15 to 30 minutes. Once finished, strain the milk into a bowl using a fine mesh sieve. The milk may appear curdled or clumpy, but don't worry, it will come back together. Press on any milk solids and mint leaves to extract all the liquid possible. Give the milk a quick stir to smooth it out and set aside.
  2. While the mint is steeping in the milk, preheat the oven to 325 degrees F. Line a standard muffin tin with paper liners.
  3. In a medium bowl, whisk together the flour, baking powder and salt.
  4. In an electric mixer on medium-high speed, beat the butter and sugar together until pale, light, and fluffy (about 5 minutes).
  5. Reduce the mixer speed to medium and add the eggs one at at time, mixing thoroughly after each addition.
  6. Scrape the sides of the bowl and add the lime zest, lime juice, vanilla extract and rum. Mix until combined.
  7. Reduce the mixer speed low. Add the dry ingredients in three batches, alternating with the buttermilk in two batches. Mix only until just incorporated, using a rubber spatula to give it one last mix by hand.
  8. Divide the batter between the muffin cups. Bake for approximately 25 minutes or until just slightly golden and a skewer shows only moist crumbs attached, rotating the pan at the halfway point.
  9. While the cupcakes are baking, combine the rum and mint sprigs in a small saucepan and warm over medium heat until the rum is heated through (do not let it simmer). Remove the pan from the heat, cover, and let steep until ready to use.
  10. Allow cupcakes to cool for 5 to 10 minutes and then remove to a cooling rack. Brush the tops of the cupcakes with the mint-infused rum. Set the cupcakes aside to cool completely before frosting them.
  11. To make the frosting, whip the butter on medium-high speed of an electric mixer using the whisk attachment for 5 minutes. Reduce the speed to medium-low and gradually add the powdered sugar, mixing and scraping the sides of the bowl until all is incorporated. Give it a mix on medium speed for about 30 seconds. Add the lime juice and rum and mix on medium-high speed until incorporated and fluffy. If the frosting appears a bit too soft, add some additional sugar, one spoonful at a time until desired consistency is reached. Frost cupcakes and garnish, if desired, with a lime wedge and sprig of fresh mint.
The recipe called for buttermilk. I started off with buttermilk but mine ended up simmering and I didn't had additional to work it. So I ended up substituting buttermilk with full cream milk and the cupcake still turned out fine!

More experiments on Chai  Tea. This time its Chai Tea Chiffon Cake with Chai Whipped Cream.

I adapted the Chai Cream recipe from this site. But instead of preparing all the spices, I infused the cream with the tea leaves from T2. The steps are exactly the same, and the cream is prepared one day before so that it's cold enough to be whipped.

Chai Tea Chiffon Cake

Ingredients
(A)
225g all-purpose flour
1 tsp baking powder
1 tsp salt
65g sugar

(B)
1/2 cup vegetable oil
6 egg yolks
3/4 cup water
1 tbsp Chai Tea leaves

(C)
6 egg whites
1/2 tsp cream of tartar
95g sugar

  1. Preheat over to 175 degree celsius.
  2. Combine (A) in a bowl. Stir well to blend.
  3. Combine (B) and stir till well blended.
  4. Make a well in (A), add (B) to the flour mixture. Beat with mixer until smooth.
  5. Beat egg whites till foamy. Add in 1/3 of the sugar and cream of tartar, beat for a few minutes.
  6. Add in remaining 2/3 sugar and cream of tartar, continue beating with stiff and glossy peak.
  7. Gently fold in 1/3 of egg white mixture to egg yolk mixture.
  8. The mix and fold in the egg yolk mixture to the rest of the egg white mixture till well combine.
  9. Pour mixture into cupcake liners.
  10. Bake for 10 - 15 min.
  11. Whip Chai Tea cream till peak. Decorate cupcake with cream once the cake is cool.

Finally alive after 2 years? Haha! I have been baking once a while for the 2 years, just that they're missing from my blog. So what goes up first after 2 years?

Lychee Cupcake! I had craving of Lychee Martini for days.. But I did a non-alcohol version so that everyone can have a taste of it. Definitely will try Lychee Martini cake the next time!

Lychee Cupcake

The cupcake was Buttermilk Cupcake (and replaced Vanilla essence with Lychee essense), with Lychee Fresh Cream to top it off.

Lychee Fresh Cream

Ingredients
500 ml whipping cream
50 - 100g Icing Sugar
1 tsp Lychee Essence


  1. Pour whipping cream and icing into mixing bowl. Whip cream and sugar till cream peaks and stiff enough to be piped.
  2. Add Lychee Essence and give it a quick stir.
  3. Pipe Lychee cream onto cooled cupcakes and decorate with cut lychees

Very inspired by Hairloom and Caramel cafe to try my hands out on this! Armed with my Buttermilk Cupcake recipe and managed to find a good recipe for Caramel Buttercream. Caramel was made from scratch with a tinee bit modification to the recipe itself. Whooot! The Caramel is to die for la! =P

Buttermilk Cupcake with Salted Caramel Buttercream

Salted Caramel Buttercream (adapted from "Gimme Some Oven")

Ingredients (makes frosting for 12 cupcakes)
50g caster sugar
2 Tbsp. water
100ml heavy cream (or whipping cream)
1 tsp. vanilla (I used 1 Vanilla pod)
85g butter, softened
85g shortening
250g icing sugar
pinch of salt

  1. Mix together caster sugar and water in a small saucepan and bring to a boil over medium-high heat.
  2. Continue cooking, without stirring, until mixture turns dark amber in color, about 6 to 7 minutes.
  3. Remove from heat and slowly add in cream and vanilla, stirring with a wooden spoon until completely smooth.
  4. Set aside until cool to the touch, about 25 minutes.
  5. Beat the butter, shortening and salt in the bowl of a stand mixer fitted with the paddle attachment on medium-high speed until light in color and fluffy, about 3 minutes.
  6. Reduce speed to low, add powdered sugar, and mix until completely incorporated.
  7. Turn off the mixer, and then add caramel. Beat frosting on low to combine, and then increase to medium-high and beat until airy and thoroughly mixed, about 2 minutes.
  8. Refrigerate if not using immediately (or to harden the frosting a bit).

I'm planning for Annsley's birthday cake next week. 'Am baking a Chocolate Blueberry Cake, accompanied with cupcake topped with alphabets to form Annsley's name. So I was searching around for good cupcake recipe and found one really tasty one! Love the strong butter taste of the cupcake especially!

A muffin weekend! Thanks to MC's inspiration, I decided to try out baking muffins using cake mix. I even got a recipe book for it. Hehehe... A wee bit sweet though, but the muffin turned out to be REALLY moist and soft. Adding some cocoa powder might make it less sweet.



Double Chocolate Chip Muffin


Ingredients
1 pkg deep chocolate cake mix
1 pkg chocolate instant pudding mix
4 eggs
250ml sour cream
125ml water
75ml vegetable oil
1 2/3 cups chocolate chips

Method
1. Preheat oven to 180 deg c.
2. In large mixer bowl, combine cake mix, pudding mix, eggs, sour cream, water and oil.
3. Beat on low speed for 1 minute to blend, then on medium speed for 1 minute.
4. Stir in chocolate chips.
5. Spoon batter into prepared muffin tins.
6. Bake 20 - 25 minutes.
