I love tiramisu! Love the combination of mascarphone cheese, coffee, and liquer in this dessert, because each of those ingredients are my favorite!


Many years back, I've attempted Tiramisu, where the recipe can be found in the Cheese Category of my blog. The recipe and ingredients were simple and the results was delicious as well. However, the recipe I had was meant to be presented in cup, rather than cake form. Well, presenting in cup is fine, but I love the joy of slicing through a cake and peeping inside the cake to see how it has been beautifully layered.


So for a period, while I was researching for some interesting, I came across this site called Brown Eyed Baker. I love her site, and her recipes are always easy to follow and they never fail. On her site, I found a recipe for Tiramisu, which involved a little more steps and ingredients to it.Well, since I've tried a couple of her recipe, no harm giving the Tiramisu recipe a try and see how that turns out.


I have to say the result was DIVINE! I could finally present my Tiramisu in a cake form. The cheese was just nice and not-too-rich. With whipped cream included in the recipe, it just makes the whole cake light, making one unable to resist taking a few more slices.


In my company, we have a bake-off challenge every few months, and I made Tiramisu for the bake-off entry. I'm very happy to say that most people in the company agreed that my Tiramisu was awesome and voted it as #1! What an achievement! And with that, I even had my first cake order in years!



Tiramisu

Ingredients
2 1/2 cups (590 ml) of strong brewed coffee
1 1/2 tbsp instant espresso powder
6 1/2 tbsp of coffee liquer (I always increase the quantity to give it a stronger taste)
6 egg yolks
135g sugar
1/4 tsp salt
3/4 cup (175 ml) heavy cream
680g mascarphone cheese
400g ladyfingers (1 pack usually comes in a pack of 20 - 24 biscuits)
3 1/2 tbsp cocoa powder


  1. Stir coffee, espresso, and 2½ tablespoons Kahlua in a wide bowl or baking dish until espresso dissolves; set aside.
  2. In bowl of standing mixer fitted with whisk attachment, beat yolks at low speed until just combined. Add sugar and salt and beat at medium-high speed until pale yellow, 1½ to 2 minutes, scraping down bowl with rubber spatula once or twice. Add ⅓ cup of the heavy cream to yolks and beat at medium speed until just combined, 20 to 30 seconds; scrape bowl.
  3. Set the bowl with yolks over a medium saucepan containing 1 inch of gently simmering water; cook, constantly scraping along bottom and sides of bowl with heatproof rubber spatula, until mixture coats back of spoon and registers 160 degrees on instant-read thermometer, 4 to 7 minutes. Remove from heat and stir vigorously to cool slightly, then set aside to cool to room temperature, about 15 minutes.
  4. Whisk in remaining 4 tablespoons Kahlua until combined. Transfer bowl to standing mixer fitted with whisk attachment, add mascarpone, and beat at medium speed until no lumps remain, 30 to 45 seconds. Transfer mixture to large bowl and set aside.
  5. In now-empty mixer bowl, beat the remaining cream at medium speed until frothy, 1 to 1½ minutes. Increase speed to high and continue to beat until the cream holds stiff peaks, 1 to 1½ minutes longer. Using a rubber spatula, fold one-third of the whipped cream into mascarpone mixture to lighten, then gently fold in remaining whipped cream until no white streaks remain. Set mascarpone mixture aside.
  6. Working one at a time, drop half of ladyfingers into coffee mixture, roll, remove and transfer to 13 by 9-inch glass or ceramic baking dish. (Do not submerge ladyfingers in coffee mixture; entire process should take no longer than 2 to 3 seconds for each cookie.) Arrange soaked cookies in single layer in baking dish, breaking or trimming ladyfingers as needed to fit neatly into dish.
  7. Spread half of mascarpone mixture over ladyfingers; use rubber spatula to spread mixture to sides and into corners of dish and smooth surface. Place 2 tablespoons cocoa in fine-mesh strainer and dust cocoa over mascarpone.
  8. Repeat dipping and arrangement of ladyfingers; spread remaining mascarpone mixture over ladyfingers and dust with remaining 1½ tablespoons cocoa. Wipe edges of dish with dry paper towel. Cover with plastic wrap and refrigerate 6 to 24 hours. Cut into pieces and serve chilled. Leftovers can be stored, tightly wrapped, in the refrigerator for up to 3 days.

Ingredients

(A)
225g all-purpose flour, sifted
1 tbsp baking powder
1 tsp salt
65g sugar

(B)
1/2 cup vegetable or canola oil
6 egg yolks
3/4 cup water
1 tbsp Earl Grey Tea leaves

(C)
6 egg whites
1/2 tsp cream of tartar
95g sugar

  1. Preheat oven to 175 degree celsius.
  2. Combine (A) in a bowl. Stir well to blend.
  3. Add (B). Beat with an electric mixer until smooth.
  4. Beat (C) until moist peaks formed. Gradually add 3/4 cup sugar, beating until stiff and shiny peaks are formed.
  5. Fold 1/3 of the egg whites into the egg yolks mixture, fold to mix and then add the rest of the egg whites. Fold gently but thoroughly.
  6. Pour batter into ungreased 10" tube pan.
  7. Bake for 60 mins or til a toothpick inserted in the center comes out clean.
  8. Invert cake and cool completely in pan. When cool, loosen the edges and shake pan to remove cake.

I was searching around for Kueh Lapis recipe and got this one from PY! Easy to follow recipe, but takes a LOT of time! You have to literally grill the cake layer by layer, and each layer takes 3 - 5 min. So you'll need to be standing by the oven, watching it, making sure that it doesn't get burnt. I now know why it such an expensive cake! But well, this is a cake that cannot be missed out during CNY and it's worth the effort!

Ingredients
7 eggs, separated into yolks and whites
150g sugar
1 tsp vanilla essence
150g butter, soften at room temperature and beaten
1 tbsp brandy
90g plain flour, sifted
1/4 tsp mixed spice, sifted
  1. Grease base and sides of a 17cm square cake tin.
  2. Line base with greased greaseproof paper.
  3. Whisk eggs yolks, sugar and vanilla essence until creamy.
  4. Beat in butter and brandy. Stir in sifted ingredients. Set aside.
  5. Whisk eggs whites until just stiff,our egg yolk mixture over beaten egg whites. Fold gently.
  6. Place prepared tin under grill for 1 minute. Remove from grill and add a ladleful of batter. Spread batter evenly by rolling wrist to tilt tin. Return to grill for 5 mins or until lightly brown. Repeat until batter is used up.
  7. After last layer, turn out and leave to cool on a wire rack.

I'm planning for Annsley's birthday cake next week. 'Am baking a Chocolate Blueberry Cake, accompanied with cupcake topped with alphabets to form Annsley's name. So I was searching around for good cupcake recipe and found one really tasty one! Love the strong butter taste of the cupcake especially!

I got this recipe from Alex Goh's Baking Code. After umpteen times of failed swiss rolls, I finally managed to get one right and looking nice!

5 eggs
150g sugar

130g plain flour

100g corn oil

1 egg yolk
1 tsp chocolate emulco
Strawberry jam to spread
  1. Whip ingredients A till light and fluffy. Fold in ingredients B, mix till well-blended.
  2. Add in ingredients C, mix till well incorporated.
  3. Pour mixture into greased and lined 10" x 12" x 1" rectangle tin and level it.
  4. Mix ingredients D till well-combined. Place it into piping bag, pipe it on top of the batter and swirl to make marble effects.
  5. Bake at 190 degree celcius, in the middle shelve of the oven for 20 min.
  6. Remove it immediately from the tin when baked.
  7. Allow to cool, spread jam at the bottom of the cake and roll it up.

Another recipe taken from Joyofbaking.com. The muffins turned out pretty but it wasn't yummy. Partly due to the fact that NTUC didn't really sell sweet and delicious fresh blueberries. When baked, there's no strong blueberry flavor at all and the blueberry taste a tit bit sour.

So try this recipe if you really get very nice blueberries. =D

Ingredients
240ml milk
2 large eggs, lightly beaten
1 tsp vanilla extract
420g flour
200g castor sugar
1 tbsp baking powder
1/2 tsp salt
113g unsalted butter
260g fresh or frozen blueberries
1/2 tbsp grated lemon zest
2tbsp unsalted butter, melted

  1. Preheat oven to 350 degrees F (177 degrees C). Place rack in middle of oven. Line muffin pans with paper liners or spray with a vegetable spray.
  2. In a small measuring cup mix together the milk, eggs, and vanilla extract. Set aside.
  3. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  4. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs.
  5. Remove 1 cup of the mixture and place in a small bowl to make a streusel topping later.
  6. Gently fold in the blueberries and lemon zest.
  7. Add the milk and egg mixture to the flour mixture. Stir until just combined. Do not over mix this mixture or the muffins will be tough when baked.
  8. Fill each muffin cup almost full with the batter, using two spoons or an ice cream scoop. Fill any unused muffins cups with water to prevent the pan from warping.
  9. For streusel topping: Melt the remaining 2 tablespoons (28 grams) butter and drizzle over the reserved 1 cup of streusel topping. Mix together with a fork until it is crumbly and looks like coarse meal.
  10. Sprinkle a couple of teaspoons of the streusel over the top of each muffin. Place in the oven and bake until very lightly browned and firm to the touch and a toothpick inserted in the center comes out clean, about 18 - 20 minutes.
  11. Place on a wire rack to cool.
  12. Makes 12 - 14 regular-sized muffins.

Took this recipe from JoyofBaking.com. Great website! The authors gives lots of tips on what to look out for! The steps are simple and easy to follow!

Like the photo on the website, the cake turned out soft and springy! The toasted walnuts enhanced the taste and makes the cake very fragrant! The cake was supposed to be frosted with cream cheese frosting, but I skipped that step as I wanted a light cake. Mom loves the cake and request to bake only this cake in future... FAINTZ!

Ingredients
100g walnuts, toasted and coarsely chopped
340g raw carrots, finely grated
280g all-purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 salt
1 1/2 ground cinnamon
4 large eggs
300g granulated white sugar
240 ml safflower, vegetable or canola oil
2 tsp pure vanilla extract
Note: For a moister carrot cake, add 1/2 cup of crushed pineapple (well drained) or applesauce to the batter when you add the oil and vanilla extract. You may have to bake the cake a few minutes longer.

Cream Cheese Frosting
Ingredients
57g unsalted butter, room temperature
227g cream cheese, room temperature
230g icing sugar, sifted
1 tsp vanilla extract
finely grated lemon zest of one lemon

Garnish: (Optional)
100g toasted and finely chopped walnuts or pecans
Marzipan Carrots

  1. Preheat oven to 180 degrees C and place rack in center of oven. Butter or spray two - 9 x 2 inch (23 x 5 cm) cake pans and line the bottoms of the pans with a circle of parchment paper.
  2. Toast the walnuts for about 8 minutes or until lightly browned and fragrant. Let cool and then chop coarsely.
  3. In a separate bowl whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
  4. In bowl of electric mixer, beat the eggs until frothy (about 1 minute). Gradually add the sugar and beat until the batter is thick and light colored (about 3 - 4 minutes).
  5. Add the oil in a steady stream and then beat in the vanilla extract.
  6. Add the flour mixture and beat just until incorporated. With a large rubber spatula fold in the grated carrots and chopped nuts.
  7. Evenly divide the batter between the two prepared pans and bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and let cool on a wire rack. After about 5 -10 minutes invert the cakes onto the wire rack, remove the pans and parchment paper, and then cool completely before frosting.
  9. To assemble: place one cake layer, top side down, onto your serving plate. Spread with about one third of the frosting. Gently place the other cake, top of cake facing down, onto the frosting, and spread the rest of the frosting over the top and sides of the cake. If desired, press toasted and finely chopped nuts on the sides of the cake and decorate the top of the cake with marzipan carrots (see below). Cover and refrigerate any leftovers.

Frosting
In bowl of electric mixer (or with a hand mixer), beat the cream cheese and butter, on low speed, just until blended with no lumps. Gradually add the sifted powdered sugar and beat, on low speed, until fully incorporated and smooth. Beat in the vanilla extract, and lemon zest.

The Blueberry Chiffon Cake was tasty, but the colour was hideous, so it's not suitable to load the picture online. That will probably scare people away! LOL

Anyway, I got hooked on my Kenwood, so I baked another Chiffon Cake today! Orange Chiffon Cake! Got the recipe from Aunty Yochana. The cake tastes YUMMY and refreshing with the orange flavour! The texture was light and fluffy, and it was not dry.

The recipe calls for Orange Emulco, but since I don't use it all the time, the emulco will probably expire the second time I think about using it again. So instead, I used orange rind, which is more convenient and natural, it also exudes the strong orange flavor the cake needs.

So while I was trying to avoid the rain on my way back home after a good lunch with Pei, I managed to grab Alex Goh's 'Baking Code' from Popular Bookstore. Local cookbooks are always the best plus the steps in his book are clear and precise, which is good!

Anyhow, I tried out his recipe on Traditional Butter Cake. And it was yummy!

160g butter

Ingredients D
280g plain flour

  1. Cream Ingredients A until smooth and fluffy.
  2. Whip Ingredients B until light and thick. Add in Ingredients C, mix until evenly blended.
  3. Add in Ingredients A, mix until well-combined. Add in Ingredients D, mix until well incorporated.
  4. Take 100g of the above batter and mix with Ingredients E until well-blended.
  5. Use teaspoon to spoon the chocolate batter over the plain batter and swirl it to make marble effects.
  6. Bake at 175 degree celcius for 50-60 minutes.

It's more brownie muffins again this week and PANDAN CHIFFON CAKE! I'm very proud this time round. After like 3 - 4 failed attempts at baking this, I FINALLY succeeded! *beam* Even mum said this time round it's nicer.





Pandan Chiffon Cake
Ingredients

(A)

Wheee! My first attempt at cupcakes! I'm pretty satisfied with the presentation, they look pretty and girly. Ok, maybe I should name my post as girly cupcakes. Need to improve on the tastes though. I added a cap of Baileys to the cupcake, which made the cupcake more fragrant. The icing turned out too sweet, silly me forgot to monitor the sweetness while whipping the cream into shape... duh... But it's not easy to handle the cream, all the oil makes the utensils really difficult to wash, I had to soak them in soap water. >.<"









Cupcake
Ingredient

115g butter
200g caster sugar
2 eggs
215g flour
1/4 tsp salt
1.5 tsp baking powder
115ml milk
1 tsp vanilla essence

  1. Preheat oven 190 degree celsius.
  2. Cream butter, sugar and vanilla essence till light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Sift flour, baking powder, salt.
  5. Fold flour into butter mixture, alternating with milk.
  6. Fill the cups half-full and bake for 20 min.


Buttercream Icing (to be prepared the day before)
Ingredients
35g solid vegetable shortening
30g butter
150g icing sugar
1 tsp vanilla essence
2 - 3 tsp milk



Flavourings
Chocolate - Blend 1 tbsp cocoa powder with 1 tsp hot water
Coffee - Blend 2 tsp coffee powder with 1 tbsp hot water


  1. Put shorteningg, icing sugar, vanilla essence and 1 tsp milk in a bowl.
  2. Beat and add sufficient extra milk to give a light, smooth and fluffy consistency.
  3. Keep bowl covered with a damp cloth until ready to use.
  4. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Re-whip before using.

An old recipe since my Home Econ days. Love the smell of the fresh lemon... A tat bit too sweet and sour I find, so you might want to add in more water to fine-tune the taste.

I'm attempting cupcakes and swiss roll this weekend. Stay tuned! =)






Lemon Meringue Pie (makes about an 8" pie)

Ingredients

Crust:
400g digestive biscuit
200g butter, melted

Lemon Cream:
200g caster sugar
Zest of 1 large lemon ( approx. 14 g)
60 g cornstarch
Pinch of salt
320 ml cold water
125 ml fresh lemon juice, strained
3 egg yolks

Meringue:
3 egg whites
Cream of Tartar
150g caster sugar


Method

  1. Preheat oven to 160°C.
  2. Mix the melted butter and digestive biscuits in a mixing bowl till bonded.
  3. Lay the mixture firmly onto the pan and freeze the batter for at least 15 minutes.

To make lemon cream

  1. Place sugar, zest, cornstarch and salt into a stainless steel pot, mix ingredients well.
  2. Add egg yolks and mix until well blended.
  3. Add the lemon juice and mix to make a thick cream.
  4. Add the water and place on the stove to bring to a boil mixing all the time.
  5. When the mixture starts to boil, keep on the burner for 1 minute and mix well. Pull aside and let cool it for a while.

To make meringue

  1. In a bowl, using a mixer, at high speed mix the 3 egg whites with a touch of cream of tartar, bring to a medium froth.
  2. Add 150g sugar, one tbsp at a time making sure to dissolve. Sugar grains will turn liquid and you get this syrup between the cream and the meringue while baking.
  3. Take the pie shell, add the lemon cream, level nice.
  4. Add the meringue and spread all over the cream. With the back of a spoon make peaks, touching the meringue and pulling up really fast.
  5. Place pie in the oven and bake for about 30 minutes or until meringue should look light brown to the tip of the peaks. If the meringue is getting dark really fast, it means that the temperature is too high. Lower the temp.
